Every good cook (I don't do this for a living) absolutely MUST have a set of tools (knives) to get the job done in style! It is like the difference between a screwdriver and a drill. They both work but one gives you a work out and the other gives you a smooth sense of accomplishment. I like making soups & stews from scratch, meaning soup bases come from the bones & vegetables I cook, render down & freeze for later. These knives are balanced perfectly, super sharp and they look very good.
I have wanted to purchase a nice set of knives for many years, so I finally broke down and got two of them, this one and a 5" utility knife (also reviewed). This knife is SHARP, and the edge is holding eve with consistent use. I make sure to wash and dry it by hand after I use it, and I know it will last me until I die. The only reason it lost a star is that Zwilling does not offer any knife block that will actually hold this knife! If you are holding the knife and the sharp edge of the blade is on a chopping block, the height of the knife, from the sharp edge to the top (back) of the blade is so tall that no blocks have slots wide enough to hold this knife. So, I have to keep it in the box, which I'm not so happy about. Seriously, Zwilling, you make a knife but no block capable of holding it? I'm not sure I would by this same knife again, I might buy one slightly smaller because of this, but honestly it's the only thing I can say negative about it. This knife is awesome!
